Ingredients for the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Drink (produces 850ml, to serve 10)

100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Cordial: Put all the components inside a pot, bring to a simmer, mixing so the sugar melts. Then, remove from the stove allowing it to cool completely. Pour to a sealable bottle, cap it keeping it in the refrigerator, where it will keep for about four weeks.

To make Batch Mix: Mix every liquids into a large bottle, allow it to infuse for an hour, then filter it best through cheesecloth, making it completely strained.

For serving: Pour 85ml from the cocktail base into a cocktail shaker filled with ice, gently stirring gently for about 60 seconds until cold. Filter to a cold coupe glass or a similar vessel, decorate with a few cranberries and complete it by giving it a brief mist with the mandarin essence above the glass.
